Let's get slow cookin'

I have really been slacking on my cookbook challenge. So I thought it was about time I got back to it. For this challenge I choose a crock-pot cookbook that my mother gave me a few years ago.



This chilly weather is great for a bowl of clam chowder, so that is what I made. The ingredients were very simple and it really didn't take much time to put it together. However, being a slow cooker, it did take 7 hrs to cook.






All in all it was a pretty good chowder, but I think it could have been better. It was definitely no Oregon Coast chowder! I did add a red and green hot pepper for extra flavor and used the stick blender to make it a little less chunky. Still I think it could have used more potatoes and should have been a little thicker. But, that's why we have leftovers. I'll jazz it up tonight and I'm sure it will be delish!

The Office

No, not the television show. I'm talking about what will soon be our new home office.
We have a screened in porch attached to our house that is in desperate need of some TLC. When we bought the house I pictured us cleaning up this space and having a small dinner party out there, reading a book on a nice summer day or what have you. Well, that never happened. It's dirty, gross and spidery so we never go out there. Plus, it's main view is the side of our neighbors house. Although our neighbors have a beautiful home and yard, I would rather sit on our back patio and admire our yard than covet my neighbors. It's just wasted space.

So, after chatting with Tim one day, we decided it would be the perfect space for an office. And thanks to my wonderful uncle, we may have a beautiful new office sometime next month!


I cannot wait to get started on this project! More to come.

HAPPY NEW YEAR!!

Yet another New Year's Eve spent at home, just the way we like it!

For the past three years we have spend our New Years Eve at home. I make a surf and turf dinner, we drink something tasty and then watch movies. May sound lame and boring to some, but to us it's heaven. After a busy Christmas it's so nice to not have to make plans and to just stay home. I half thought about joining our other friends at Octavia and John's house this year, but that didn't happen. After dinner and a few drinks we were in for the night. I almost made it to mid-night this year but I fell asleep about 11:05. I awoke at the strike of mid-night to Tim jumping on me screaming HAPPY NEW YEAR! It was a great night and I wouldn't have it any other way. :)
